Steamed fruit cake by Bisous a' Toi for Eidulfitri!
3 days left till Eid Celebration. I still could not fit in my 'baju kurung' that I aimed to wear after foolishly assuming that I will lose weight during this Ramadhan! Ahaks!
So the outcome is that I will be mismatched with my husband's raya outfit for this year, again. LOL.
However, I am proud that I made homemade food this Ramadhan and only ate out once with my husband at King's hotel Thai restaurant.
Anyways, I am excited to be baking for the first time my own fruit cake. The aroma is totally delightful! Thanks to Kak Rima for sharing her recipe. This one definitely for keeps! Her recipe here.
I only made 1/3 of her ingredients, cos I didn't have the large baking tins that she has. I made in small containers. Plus, its easier to distribute to family and friends.. =)
This is the lovely outcome. I would just like to comment that, I think I should have stirred more rigorously after adding in the hot caramel so that the browning of the cake is more thorough, as to having several dark patches around the cake. Hihi.. oh well, hubs bagi I 5 star. So okay la tu. =)
Alhamdulillah. Paling sedap makan bila dah sejuk. Kak Rima suggest after resting 2-3 days in the fridge.
Ingredients:
1) 1 1/3 cups of all purpose flour*
2) 1 tsp of tartar*
3) 1 tsp bicarbonate soda*
4) 250 Golden Churn butter
5) 1/3 cup of caster sugar
6) 2 eggs
7) a few drops of vanilla essence
8) 1/2 tbsp black treacle
9) 200 gm of mixed fruit
10) 1 cup of sugar to make caramel
