Roast chicken recipe
This week has been a lazy week for me and my friends.I have been doing nothing really. Nothing at all, except a small side business of selling coach and fossil bags to people back at home in Malaysia. Chiwimbo has started watching 'Gilmore Girls' series marathon at home.. and the theme song.. "when you lead, I follow~ bla bla bla"... kept repeating itself in my head.. dang!!!
However last week I bought a whole chicken and made my most beloved roast chicken.. mind you I didn't touch meat for almost a month, since the HALAL shop is 1 hour away from where I live. My speciality would be roast chicken and roast turkey. The trick with making a delicious roast chicken is the balance of herbs, water and heat. yup. all these three elements should be correct.
Let me show you the way:
1) Buy a fresh/organic stuffing, I got mine in London. Really good. Or you can make your own stuffing! Bread crumbs ( one cup) + garlic (2 cloves) + lemon skin ( 2 teaspoon)+ parsley + salt + pepper + thyme
and blend them up!
2) Make sure you cook the stuffing with chicken stock ( 1/2 - 1 cup) until damp, DEFINITELY not dripping or soupy!
3) Clean the chicken esp at the butt..and stuff away inside of the chicken with the delicious stuffing.
4) Rub salt, pepper, paprika and whatever herbs you have at home UNDER the skin of the chicken.
5) Pour a generous amount of honey, bbq sauce, or whatever sauce you have in your fridge on top of the chicken's skin. I put ginger paste and olive oil on top of it too..Simply love, love the aroma!
6) Wrap up the chicken in foil and put it in the pre-heated oven (450 F) OR (232 C) for ( 2- 4 hours)
7) The tricky part is you have to check your chicken every 1 hour and add water around the pan or inside the foil.. you want to chicken to be moist not wringkley! Ok!
8) If you are more hardworking and determined than I am..put bits of carrots, potatoes and celery unter your chicken as you roast them together, and the water from the chicken will give the vege a scrumptious taste! Divine.. totally divinee
I wish you could smell it.. the aroma filled the whole house of Bergner with glory and warmth!
The leftovers I made into other dishes such as chicken sub, curry, etc..
