Recipe : Blueberry muffins for the muffin tops!

Girls... its exam week and its pretty daunting for me.. =s Hence, when I am stressed out and in panic, it will manifest itself in cooking and strenuous cleaning routines. Haha..
I went to the market today after a jog. Omg, the tulips are out!! Sorry didn't take any pictures, not feeling too well.. Been sick and having sore throat since a few days ago.. *cough2*
At the chicken market I saw blueberries on sale. £1 per pint, so without further a due, I took two pints and decided to make a blueberry muffin. Like, how hard can it be right? =D
Hubby came back earlier than anticipated, and I hadn't taken a shower yet. He kissed me and said, 'Darling, you smell like 'kerang' (aka mussels)'....=_=' Arghh... so not going to happen again. So embarrassing okay! Grrrrr
Anyways, he helped me cook lunch, ayam masak kicap and help me stir the muffin batter. Thank you sweetie. Here is the recipe, I substituted the bleached sugar with brown sugar and it wasn't so sweet. Really nice for a tea time treat. =)
Try it out!
Ingredients:
2 cups of self raising flour
2 cups of brown sugar
1/4 cup of butter
a pinch of salt
2 eggs
1 tsp of vanilla extract
1/2 cup of milk
1 1/2 cups of blueberries
1 tsp of lemon juice (optional)
To have the peak and muffin top effect, fill the paper cups full to the brim and let it pour its heart out.. haha. I baked each around 10 mins because my oven is rather not sophisticated and would easily burn the baking goods.
